Preparation
- Cook the pasta: Bring a large pot of salted water to a rolling boil and cook the pasta until just al dente, then drain and rinse under cold water.
- Combine solids: In a large bowl, mix the cooled pasta with diced turkey, crumbled bacon, halved cherry tomatoes, diced cucumber, and red onion. Toss gently.
Dressing
- Make the dressing: Whisk together mayonnaise, sour cream, Dijon mustard, and a pinch of salt and pepper until smooth.
Assembly
- Toss pasta with dressing: Pour the dressing over the pasta mixture and gently toss until the pasta is coated.
- Chill: Cover and refrigerate for at least 30 minutes to let flavors meld.
- Garnish and serve: Fluff the salad, sprinkle with chopped parsley, and serve cold.
Notes
Best served cold and can be stored in an airtight container for up to 3 days. Don't freeze with vegetables due to texture concerns.
