Ingredients
  

For the Marinade
  • 1/2 cup sweet chili sauce A Thai-style sweet chili sauce with visible chili flecks is recommended.
  • 2 tablespoons soy sauce Use regular or low-sodium soy sauce.
  • 2 tablespoons rice vinegar Apple cider vinegar can be used as a substitute.
  • 1 tablespoon sesame oil Adds a toasted flavor.
  • 2 cloves garlic, minced Fresh minced garlic is preferred.
  • 1 teaspoon ginger, grated Use fresh ginger for best flavor.
  • 1/2 teaspoon salt Adjust to taste based on soy sauce used.
  • 1/4 teaspoon black pepper
  • 1 pound chicken (breasts, thighs, or wings) Any chicken part can be used.

Method
 

Preparation
  1. In a medium bowl whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, salt, and black pepper until the mixture looks smooth and glossy.
  2. Place the chicken pieces in a resealable plastic bag or shallow dish, then pour the marinade over so every piece is coated.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 1–2 hours.
Cooking
  1. Preheat your grill, oven, or skillet while the chicken finishes marinating.
  2. Remove chicken from the marinade and discard leftover marinade.
  3. Cook chicken by your preferred method according to recommended times for each chicken part.
  4. Serve hot and garnish as desired.

Notes

Refrigerate cooked chicken in an airtight container for 3–4 days. For longer storage, freeze in a freezer-safe container for up to 3 months.
