Preparation
- In a medium bowl whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, salt, and black pepper until the mixture looks smooth and glossy.
- Place the chicken pieces in a resealable plastic bag or shallow dish, then pour the marinade over so every piece is coated.
- Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 1–2 hours.
Cooking
- Preheat your grill, oven, or skillet while the chicken finishes marinating.
- Remove chicken from the marinade and discard leftover marinade.
- Cook chicken by your preferred method according to recommended times for each chicken part.
- Serve hot and garnish as desired.
Notes
Refrigerate cooked chicken in an airtight container for 3–4 days. For longer storage, freeze in a freezer-safe container for up to 3 months.
