  • 1 cup Fresh herbs (basil, parsley), chopped Use fresh herbs for maximum flavor.
  • 2 tbsp Olive oil Extra virgin olive oil recommended.
  • 1 tbsp Balsamic vinegar Enhances the flavor of the mixture.

Preparation
  1. Wash and prep all the fresh vegetables and herbs: dice tomatoes, slice cucumbers, and pit and mash avocados.
Combining Flavors
  1. Mix the mashed avocados with chopped tomatoes and herbs, then add olive oil and balsamic vinegar. Stir until well combined, maintaining some texture.
Assembling the Appetizers
  1. Using cucumber slices as the base, top them with the avocado-tomato mixture. Drizzle with olive oil and sprinkle with salt and pepper.
Presentation
  1. Arrange the assembled appetizers on a chilled platter and garnish with additional herbs.
