Method
 

Preparation
  1. Prepare the chicken and corn by dicing the chicken and grilling the corn until charred.
  2. Chop the cucumber and red onion, and toss the cucumber with salt and drain if necessary.
Dressing
  1. Whisk together the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and pepper until smooth.
Combine
  1. In a large bowl, combine the chicken, corn, cucumber, and red onion, then pour the dressing over and toss until coated.
  2. Chill for at least 20-30 minutes before serving, garnishing with crumbled feta if desired.

Notes

For best results, use room-temperature chicken. Drain cucumbers well to avoid excess water. This salad can be served over greens, inside pita, or with tortilla chips.
