Preparation
- Preheat your oven to 375°F (190°C) and generously grease a madeleine pan. Dust with flour or powdered sugar.
- In a medium bowl, whisk together flour, baking powder, and salt until combined.
- In a separate bowl, whisk melted butter and granulated sugar until glossy. Add eggs one at a time, mixing well, then stir in vanilla and strawberry puree.
- Fold dry ingredients into wet mixture until just combined. Avoid overmixing.
- Spoon or pipe batter into madeleine molds, filling each about 3/4 full.
Baking
- Bake for 10–12 minutes or until golden. Rotate the pan halfway through for even baking.
- Cool in pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, dust with powdered sugar or dip in granulated sugar. Store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
