Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour Choose unbleached flour for best flavor.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted Use European-style for richer flavor.
  • 1/2 cup granulated sugar
  • 2 large eggs Use room temperature for better emulsion.
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, pureed Use ripe, hulled strawberries.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and generously grease a madeleine pan. Dust with flour or powdered sugar.
  2. In a medium bowl, whisk together flour, baking powder, and salt until combined.
  3. In a separate bowl, whisk melted butter and granulated sugar until glossy. Add eggs one at a time, mixing well, then stir in vanilla and strawberry puree.
  4. Fold dry ingredients into wet mixture until just combined. Avoid overmixing.
  5. Spoon or pipe batter into madeleine molds, filling each about 3/4 full.
Baking
  1. Bake for 10–12 minutes or until golden. Rotate the pan halfway through for even baking.
  2. Cool in pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, dust with powdered sugar or dip in granulated sugar. Store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
