Ingredients

Main Ingredients
  • 200 g chicken breast, sliced Use boneless and skinless chicken breast for best results.
  • 200 g noodles (egg noodles or rice noodles) Egg noodles and fresh lo mein-style noodles work best.
  • 4 cloves garlic, minced Fresh minced garlic provides the best flavor.
  • 2 tablespoons soy sauce Choose a naturally brewed, lower-sodium variety.
  • 1 tablespoon oyster sauce This adds a sticky consistency; substitute if unavailable.
  • 1 tablespoon sugar White, cane, or brown sugar can be used.
  • 1 tablespoon vinegar (rice or apple cider) Use whichever you prefer for slight taste variations.
  • 2 tablespoons vegetable oil For frying the chicken.
  • 2 green onions, chopped green onions Garnish for the finished dish.
  • Salt and pepper to taste

Method

Preparation
  1. Cook the noodles according to package instructions, drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium-high heat.
  3. Add the sliced chicken and cook until browned and cooked through, about 5–7 minutes.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. In a bowl, mix soy sauce, oyster sauce, sugar, vinegar, salt, and pepper. Pour this sauce over the chicken.
  6. Add the cooked noodles to the pan, tossing everything together until well combined and heated through.
  7. Serve hot, garnished with chopped green onions.

Notes

For the best results, avoid burning the garlic by monitoring the heat and cooking time.
