Ingredients
  

For the tacos
  • 1 lb ground beef Use 80/20 for best flavor and sear.
  • 8 small tortillas (soft corn or flour) 6-inch size is ideal.
  • Cheese (cheddar, American, or preferred) For melt and flavor.
  • Lettuce, shredded Crisp varieties like iceberg or romaine recommended.
  • Tomatoes, diced Use vine-ripened for sweetness.
  • Pickles, sliced For tanginess.
  • Onions, sliced For crunch.
  • Ketchup
  • Mustard
  • Salt and pepper to taste

Method
 

Cooking the Patties
  1. Preheat a skillet or grill over medium-high heat.
  2. Form the ground beef into 6-8 loose balls and season with salt and pepper.
  3. Place the patties on the skillet and smash them down with a spatula, cooking for 3-4 minutes on each side or until desired doneness.
  4. Add cheese during the last 30 seconds to allow it to melt.
Preparing the Tortillas
  1. Warm the tortillas in a separate pan or microwave until pliable.
Assembling the Tacos
  1. Assemble each taco with a patty followed by cheese, lettuce, tomatoes, pickles, onions, ketchup, and mustard.
Serving
  1. Serve immediately and enjoy while hot.

Notes

Use a heavy spatula for a good sear, and avoid overloading with wet toppings to keep the base crisp.
