  • 1 teaspoon ginger, grated Grated ginger provides brightness to the sauce.
  • 1 tablespoon cornstarch (optional) For thickening the sauce.
  • 2 tablespoons water (optional) Used with cornstarch for thickening.

Method
 

Preparation
  1. In a bowl, whisk together the honey, soy sauce, minced garlic, and grated ginger until smooth and evenly combined.
  2. Place the chicken in the slow cooker in a single layer if possible, then pour the honey garlic mixture evenly over the top.
Cooking
  1. Cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
  2. If desired, mix 1 tablespoon cornstarch with 2 tablespoons water and stir into the slow cooker to thicken the sauce in the last 30 minutes of cooking.
Finishing
  1. Season with salt and pepper to taste, and shred or serve the chicken whole.
  2. Garnish with chopped green onions before serving.

Notes

For a creamy option, serve with a cottage cheese chicken parmesan bowl. If sauce is too thin, you can reduce it on the stovetop after cooking.
