Preparation
- In a bowl, whisk together the honey, soy sauce, minced garlic, and grated ginger until smooth and evenly combined.
- Place the chicken in the slow cooker in a single layer if possible, then pour the honey garlic mixture evenly over the top.
Cooking
- Cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
- If desired, mix 1 tablespoon cornstarch with 2 tablespoons water and stir into the slow cooker to thicken the sauce in the last 30 minutes of cooking.
Finishing
- Season with salt and pepper to taste, and shred or serve the chicken whole.
- Garnish with chopped green onions before serving.
Notes
For a creamy option, serve with a cottage cheese chicken parmesan bowl. If sauce is too thin, you can reduce it on the stovetop after cooking.
