Main Ingredients
  • 4 pieces boneless, skinless chicken breasts Thicker pieces are fine, but avoid frozen breasts.
  • 5.2 ounces Boursin cheese Use the original garlic & fine herbs variety.
  • 1 cup chicken broth Low-sodium preferred for better control over seasoning.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 8 ounces pasta (penne, rotini or your choice) Cook to al dente for best texture.
  • optional Parmesan cheese for serving
  • optional Fresh parsley for garnish

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker in a single layer.
  2. In a bowl, mix the Boursin cheese, chicken broth, garlic powder, Italian seasoning, salt, and pepper until mostly smooth. Pour over the chicken.
Cooking
  1. Cover and cook on low for 6–7 hours until the chicken is tender.
  2. About 30 minutes before serving, cook the pasta according to package directions. Drain.
  3. Shred the chicken in the slow cooker, mix to coat it with sauce, and adjust seasoning.
Serving
  1. Serve the chicken over the cooked pasta.
  2. Top with Parmesan and parsley if desired.

Notes

Store leftovers in an airtight container for up to 3–4 days. For meal prep, keep pasta separate to avoid sogginess. Can be frozen for up to 3 months.
