Simple Earth Day Cookies

Ingredients
  

For the cookies
  • 1 17-oz bag sugar cookie mix Look for mixes that contain real butter powder or vegetable shortening for better flavor.
  • 6 drops blue food coloring Use gel for a more vivid color. If using liquid, reduce any liquids in the mix by a tablespoon.
  • 6 drops green food coloring Like with blue, gel food coloring gives brighter color with less moisture.

Method
 

Preparation
  1. Preheat your oven to 375°F and line baking sheets with parchment paper.
  2. Prepare the sugar cookie mix according to the package instructions until a soft dough forms.
  3. Divide the dough into two equal portions and knead blue food coloring into one half and green into the other.
  4. Roll the dough into 1-inch balls and create patches from the opposite color dough, pressing them gently onto each ball.
  5. Flatten each ball to about 1/4 inch thick while preserving the color patches on top.
  6. Bake for 8 to 9 minutes until edges are set and transfer to cooling racks to cool completely.

Notes

Use room-temperature ingredients for the best dough consistency. For storing, keep cookies in an airtight container, layered with parchment, for up to 3 days.
