Preparation
- Line an 8- or 9-inch square baking pan with wax paper or parchment, leaving an overhang for easy lifting. Lightly spray the paper with non-stick cooking spray.
- In a microwave-safe bowl, combine the miniature marshmallows with the unsalted butter. Microwave for 1 minute, then stir. Continue microwaving in 20-30 second bursts until smooth and glossy.
- Divide the melted mixture into six bowls. Add gel food coloring to each bowl to achieve red, orange, yellow, green, blue, and purple. Stir until the color is uniform.
- Measure 2 1/2 cups Rice Krispies cereal for each colored bowl and gently fold it into the colored marshmallow until coated.
- Press each colored cereal mixture into the prepared pan evenly, layering each color flat and compactly.
- Allow the layered treats to cool completely. Lift them from the pan using the parchment overhang, then trim edges and cut into servings.
- Optionally, drizzle with melted white candy melts or almond bark before serving.
Notes
Store at room temperature for up to 3 days in an airtight container. For freezing, wrap tightly in plastic wrap and freezer-safe bag. Thaw at room temperature before unwrapping.
