  • 12 tablespoons unsalted butter Adds richness; if using salted butter, adjust extra salt.
  • 15 cups Rice Krispies cereal For best texture, use branded Rice Krispies or plain crisp rice cereal.
  • various gel food coloring (red, orange, yellow, green, blue, purple) Gel colors provide vivid hues without adding extra liquid.
  • as needed non-stick cooking spray or extra butter for pan Prevents sticking when pressing layers.

Method
 

Preparation
  1. Line an 8- or 9-inch square baking pan with wax paper or parchment, leaving an overhang for easy lifting. Lightly spray the paper with non-stick cooking spray.
  2. In a microwave-safe bowl, combine the miniature marshmallows with the unsalted butter. Microwave for 1 minute, then stir. Continue microwaving in 20-30 second bursts until smooth and glossy.
  3. Divide the melted mixture into six bowls. Add gel food coloring to each bowl to achieve red, orange, yellow, green, blue, and purple. Stir until the color is uniform.
  4. Measure 2 1/2 cups Rice Krispies cereal for each colored bowl and gently fold it into the colored marshmallow until coated.
  5. Press each colored cereal mixture into the prepared pan evenly, layering each color flat and compactly.
  6. Allow the layered treats to cool completely. Lift them from the pan using the parchment overhang, then trim edges and cut into servings.
  7. Optionally, drizzle with melted white candy melts or almond bark before serving.

Notes

Store at room temperature for up to 3 days in an airtight container. For freezing, wrap tightly in plastic wrap and freezer-safe bag. Thaw at room temperature before unwrapping.
