  • 3/4 cup softened salted butter Use European-style or high-fat butter for richer taste.
  • 2/3 cup granulated sugar For proper texture and sweetness.
  • 1 tablespoon almond extract Use pure almond extract for best flavor.
  • 1 egg
  • 2 cups all-purpose flour Avoid overmixing to prevent toughness.
  • as needed blue food coloring Use gel for best results.
  • as needed green food coloring Combine yellow and blue if preferred.

Preparation
  1. Preheat your oven to 325°F and line a cookie sheet with parchment paper.
  2. Beat the softened butter and granulated sugar together until light and fluffy.
  3. Mix in the almond extract and the egg until fully incorporated.
  4. Slowly add the flour until a soft dough forms.
  5. Divide the dough and tint one portion blue and the other green.
  6. Roll out blue dough to form the ocean base and shape green pieces for continents, then press gently.
  7. Cut out cookie shapes using a 4” circle cutter and arrange them on the prepared sheet.
  8. Bake at 325°F for 10–14 minutes, then allow to cool.

Notes

Store cooled cookies in an airtight container for up to a week, or freeze unbaked dough for up to 3 months. Use gel food coloring for the most vibrant results.
