One-Pot Creamy Spicy Cajun Sausage Pasta

Main Ingredients
  • 1 lb smoked sausage High-quality smoked kielbasa or andouille recommended.
  • 12 oz penne pasta Use standard dried penne, not fresh.
  • 2 cups chicken broth
  • 1 cup heavy cream Full-fat recommended for best results.
  • 1 medium onion, sliced or diced
  • 1 medium bell pepper, sliced or diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tbsp Cajun seasoning Quality blend recommended.
  • 1 tsp paprika
  • to taste salt and pepper
  • 1 cup grated Parmesan cheese for garnish
  • 2 tbsp olive oil

Method
 

Cooking
  1. Heat the olive oil in a large pot over medium heat.
  2. Slice the smoked sausage and add to the pot along with the chopped onion and bell pepper. Sauté for 5-7 minutes until browned.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, and salt and pepper. Bring to a boil.
  5. Stir in the uncooked penne pasta, reduce the heat to medium-low and simmer for 10-12 minutes until pasta is tender.
  6. Remove from heat and stir in the grated Parmesan until melted and smooth. Taste and adjust seasoning.
  7. Serve immediately with extra Parmesan on top.

Notes

Tips: Maintain medium heat when browning the sausage to avoid burning. Simmer gently when pasta is added to avoid overcooking it.
