- Heat the olive oil in a large pot over medium heat.
- Slice the smoked sausage and add to the pot along with the chopped onion and bell pepper. Sauté for 5-7 minutes until browned.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, and salt and pepper. Bring to a boil.
- Stir in the uncooked penne pasta, reduce the heat to medium-low and simmer for 10-12 minutes until pasta is tender.
- Remove from heat and stir in the grated Parmesan until melted and smooth. Taste and adjust seasoning.
- Serve immediately with extra Parmesan on top.
Notes
Tips: Maintain medium heat when browning the sausage to avoid burning. Simmer gently when pasta is added to avoid overcooking it.
