  • 6 pieces Chicken thighs Skin-on, bone-in for the best flavor and texture.
  • 1.5 tablespoons Old Bay seasoning A classic spice blend for distinctive taste.
  • 1 tablespoon Tomato paste
  • 1 teaspoon Garlic paste
  • 1.5 teaspoons Onion powder
  • 0.5 tablespoon Dried parsley
  • 2 tablespoons Avocado oil Great for high-heat cooking and healthier than many oils.
  • to taste to taste Salt and black pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). The oven should be nice and hot to ensure crispy skin.
  2. In a small bowl, combine the avocado oil, tomato paste, Old Bay seasoning, parsley, onion powder, garlic paste, salt, and black pepper. Mix until well combined.
  3. Trim off any hanging skin or excess fat from the chicken thighs and transfer them to a bowl. Add the marinade, mixing until everything is coated well. Let it marinate for at least 30 minutes if time allows.
Cooking
  1. Arrange the chicken thighs skin-side down in a baking dish and bake for 20 minutes. Carefully flip the chicken using tongs and return it to the oven for another 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
  2. Transfer the chicken to a serving plate and let it rest for 5–10 minutes. This helps the juices redistribute for flavorful bites.

Notes

For extra crispy skin, broil the chicken for an additional 2-3 minutes at the end. Serve with a light salad or roasted veggies for a well-rounded meal.
