Preparation
- Blend cream cheese and powdered sugar until smooth.
- In a separate bowl, whip the heavy cream to stiff peaks.
- Gently fold whipped cream into cream cheese mixture.
- Stir in vanilla, mint extract, and food coloring.
Crust Assembly
- Combine Oreo crumbs and melted butter; press into the bottom of a lined 8x8 inch pan.
Assembling the Bars
- Pour cheesecake filling over crust and spread evenly.
- Refrigerate for at least 4 hours until set.
Serving
- Cut into bars and garnish with whipped topping.
- Serve chilled.
Notes
Bars can be made up to 48 hours in advance and stored in the refrigerator. They can also be frozen for longer storage.
