  • 1.5 pounds Ripe Tomatoes Opt for vine-ripened varieties for the best taste.
  • 6 tablespoons Extra Virgin Olive Oil Use high-quality oil for the best results.
  • 2 tablespoons Red Grape Vinegar Red wine vinegar can be used as a substitute.
  • cup Red Onion (finely chopped)
  • 1 clove Garlic (minced)
  • 2 teaspoons Basil (chopped)
  • 2 teaspoons Parsley (finely chopped)
  • 1 teaspoon Dill (finely chopped)
  • Salt and Freshly Ground Pepper Season according to taste.

Preparation
  1. Rinse and pat dry the tomatoes before cutting them into ⅓ inch thick slices. Arrange the slices nicely in a large shallow dish.
  2. In a medium bowl, whisk together the olive oil, vinegar, onion, garlic, and chopped herbs. Add salt and pepper to taste.
  3. Pour the prepared marinade over the sliced tomatoes, spreading it evenly. Cover the dish and refrigerate for at least 2 hours to allow everything to marinate, flipping once in between.
  4. Serve the marinated tomatoes as a refreshing salad or as a side to your favorite meal.

Notes

Use ripe tomatoes for the best flavor and texture. Allow at least 2 hours of marinating time; overnight is even better! For weeknight speed, prep this dish in advance along with your main meal.
