- Rinse and pat dry the tomatoes before cutting them into ⅓ inch thick slices. Arrange the slices nicely in a large shallow dish.
- In a medium bowl, whisk together the olive oil, vinegar, onion, garlic, and chopped herbs. Add salt and pepper to taste.
- Pour the prepared marinade over the sliced tomatoes, spreading it evenly. Cover the dish and refrigerate for at least 2 hours to allow everything to marinate, flipping once in between.
- Serve the marinated tomatoes as a refreshing salad or as a side to your favorite meal.
Notes
Use ripe tomatoes for the best flavor and texture. Allow at least 2 hours of marinating time; overnight is even better! For weeknight speed, prep this dish in advance along with your main meal.
