Ingredients
  

Truffle Filling
  • 1 cup cream cheese, softened Use full-fat, block-style cream cheese for stability.
  • 1/4 cup key lime juice Fresh is ideal, but bottled key lime juice works as well.
  • 1 cup powdered sugar Provides a smooth texture without grittiness.
  • 1 teaspoon lime zest For added flavor and fragrance.
Coating
  • 1 cup graham cracker crumbs Finely crushed for even coating.
  • White chocolate for coating Melted for dipping.

Method
 

Preparation
  1. Combine the cream cheese, key lime juice, powdered sugar, and lime zest in a mixing bowl.
  2. Mix until smooth and well incorporated, scraping the bowl sides.
  3. Refrigerate the mixture for about 30 minutes until it firms up.
Forming Truffles
  1. Scoop out small portions and roll them into balls.
  2. Roll each ball in graham cracker crumbs until fully coated.
  3. Dip each truffle in melted white chocolate, then place on a parchment-lined tray.
Setting and Serving
  1. Allow to set in the refrigerator before serving for 20–30 minutes.

Notes

Store in an airtight container for up to 5 days in the fridge, or freeze for up to 3 months. Let thaw overnight in the refrigerator.
