Preparation
- Combine the cream cheese, key lime juice, powdered sugar, and lime zest in a mixing bowl.
- Mix until smooth and well incorporated, scraping the bowl sides.
- Refrigerate the mixture for about 30 minutes until it firms up.
Forming Truffles
- Scoop out small portions and roll them into balls.
- Roll each ball in graham cracker crumbs until fully coated.
- Dip each truffle in melted white chocolate, then place on a parchment-lined tray.
Setting and Serving
- Allow to set in the refrigerator before serving for 20–30 minutes.
Notes
Store in an airtight container for up to 5 days in the fridge, or freeze for up to 3 months. Let thaw overnight in the refrigerator.
