For the Chicken
  • 4 pieces Chicken breasts Look for fresh, high-quality cuts.
  • 1/4 cup Honey Can substitute with maple syrup.
  • 1/4 cup Lime juice Freshly squeezed for best flavor.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Olive oil
For the Mango Salsa
  • 1 large Mango Choose ripe mangoes for sweetness.
  • 1/2 cup Red onion Diced.
  • 1/4 cup Cilantro Fresh, chopped.
  • 1 small Jalapeño Optional, diced for heat.
For Serving
  • Rice, salad, or tortillas Choose your preferred side.

Preparation
  1. In a bowl, mix honey, lime juice, salt, and pepper to create a marinade.
  2. Marinate chicken breasts in the honey-lime mixture for at least 30 minutes to allow the flavors to penetrate.
  3. Preheat the grill or oven in preparation for cooking.
Cooking
  1. Grill or bake the chicken until cooked through (about 6-7 minutes per side on the grill or 20-25 minutes in the oven at 375°F).
  2. While the chicken cooks, prepare the mango salsa by dicing mango, red onion, cilantro, and jalapeño; mix in a bowl.
Serving
  1. Serve the grilled chicken topped with mango salsa alongside rice, salad, or tortillas.

Notes

For best results, consider marinating overnight in the fridge. Adjust the heat in your mango salsa by adding more or less jalapeño. Store leftovers in the fridge for up to 3 days or freeze marinated chicken for up to two months.
