Preparation
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, whisk together whole wheat flour, coconut sugar, baking powder, cinnamon, and salt until evenly distributed.
- In another bowl, stir the unsweetened applesauce, almond milk, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, folding gently until just combined.
- Spray a mini muffin tin with cooking spray. Fill each cup about 3/4 full with batter.
Baking
- Bake for 12–15 minutes until golden and a toothpick comes out with moist crumbs.
- Let the bites cool for a few minutes, then transfer to a bowl with additional cinnamon and sugar and roll to coat while still warm.

- Serve warm for the best texture and aroma.
