Ingredients
  

For the cookies
  • 13.25 oz white cake mix Provides structure, sweetness, and leavening.
  • 1/2 cup vegetable oil Keeps cookies moist and tender.
  • 2 large eggs Provide structure, moisture, and emulsification.
  • 1 teaspoon vanilla extract Brightens flavor.
  • as needed green gel food coloring For coloring the dough.
For the decoration
  • 12 oz white chocolate melting wafers For dipping cookies.
  • 2 tablespoons sprinkles To decorate cookies.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a large cookie sheet with parchment paper or a silicone baking mat.
Mixing
  1. In a large mixing bowl, combine the white cake mix, vegetable oil, eggs, and vanilla until uniform.
  2. Add green gel food coloring until the desired shade is reached.
Chilling
  1. Cover and chill the dough for 30 minutes to firm.
Baking
  1. Scoop 1-inch balls of dough and place them 2 inches apart on the prepared sheet.
  2. Bake for 8 to 10 minutes until set and soft.
  3. Cool on the pan for 5 minutes before transferring to a wire rack.
Decorating
  1. Melt the white chocolate in 30-second intervals until smooth.
  2. Dip half of each cooled cookie in melted chocolate and sprinkle immediately.
  3. Let cookies set for 5 minutes.

Notes

For softer cookies, underbake by one minute. Store cookies in an airtight container; they can be frozen for up to 3 months. Use gel food coloring for best results.
