  • 1 cup chopped fresh strawberries Choose ripe, fragrant berries.
  • 1/2 teaspoon vanilla extract Authentic vanilla gives better flavor.
For the Glaze
  • 1 cup powdered sugar Sift if clumpy for a smooth glaze.
  • 2 tablespoons milk Adjust milk amount for desired consistency.
  • 1/4 cup chopped strawberries for glaze For added flavor in the glaze.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, baking soda, and salt.
Mixing Ingredients
  1. In another bowl, whisk the melted butter and eggs until smooth. Stir in the chopped strawberries and vanilla extract.
  2. Add the wet ingredients to the dry ingredients and fold gently with a spatula until just combined.
Baking
  1. Pour the batter into the prepared pan and bake for 50–60 minutes or until a toothpick inserted comes out clean.
Cooling and Glazing
  1. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack.
  2. Whisk powdered sugar, milk, and reserved chopped strawberries for the glaze. Drizzle over the cooled loaf.

Notes

Store wrapped tightly for up to 2 days. Refrigerate for up to 5 days, or freeze for up to 3 months. Consider variations like adding lemon juice, almond flour, or chocolate chips for different flavors.
