Preparation
- Preheat the oven to 400°F (200°C). A hot oven helps achieve crispy skin on the chicken.
- In a large oven-safe skillet, melt the garlic butter over medium heat.
- Season the chicken thighs with salt and pepper, then place them skin-side down in the skillet. Cook for about 5-7 minutes until the skin is crispy.
- Flip the chicken thighs over and drizzle them with lemon juice and lemon zest.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F / 75°C).
- Once done, remove from the oven and let the chicken rest for a few minutes.
- Garnish your chicken with fresh parsley before serving.
Notes
Use a heavy skillet for optimal searing. Keep an eye on the chicken during the last 10 minutes of baking. For busy weeknights, consider marinating the chicken in garlic butter and lemon juice.
