  • 2 lbs boneless, skinless chicken breasts or thighs Thighs are recommended for more tenderness.
  • 1.5 lbs baby red potatoes, quartered Firm, smooth-skinned potatoes hold their shape.
  • 1 lb whole carrots, peeled and cut into chunks Cut into small, equal pieces.
  • 6 cloves garlic, minced Use fresh minced garlic for the best flavor.
  • 0.5 cup unsalted butter, melted Use real unsalted butter for better control over seasoning.
  • 1 tbsp Italian seasoning Dried herbs can be used if fresh aren't available.
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 0.5 cup chicken broth Adds moisture and flavor.

Method
 

Preparation
  1. Arrange quartered potatoes and carrot chunks at the bottom of the slow cooker. Place the chicken pieces on top.
Make the Garlic Butter Sauce
  1. In a bowl, whisk together melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth until well combined.
Combine and Coat
  1. Pour the garlic butter mixture over the chicken and vegetables, stirring gently to coat.
Cook
  1. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours. Avoid lifting the lid during cooking.
Serve
  1. Garnish with fresh parsley if desired. Serve hot, spooning sauce over the chicken and vegetables.
