Preparation
  1. Preheat your oven to 350°F (175°C) if you are using a pie crust or cake base.
  2. In a large bowl, combine the sliced peaches, sugar, lemon juice, vanilla extract, and cinnamon. Toss gently to coat the peaches evenly.
Assembly and Baking
  1. If using a pre-baked pie crust or cake base, spread the peach mixture evenly into it.

For fridge storage, consume within 3-4 days. To freeze, wrap tightly and consume within 3 months. Allow to thaw overnight in the refrigerator.
