- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a medium bowl, beat the egg lightly. Stir in the oil, buttermilk, and green food coloring until smooth.
- Pour the green wet mixture into the well of the dry ingredients and stir gently until just combined. Leave it slightly lumpy.
Cooking
- Preheat a griddle or frying pan to medium-low heat. Lightly grease with oil.
- Drop 1/4 cup portions of batter onto the griddle, leaving space between pancakes.
- Cook until edges look dry, and bubbles form, about 2-3 minutes. Flip and cook until golden, another 1-2 minutes.
- Serve warm with butter, maple syrup, or festive toppings.
Notes
Let the batter rest for 5 minutes for better lift. Ensure griddle is at the right temperature for even cooking.
