Ingredients
  

For the Crostini
  • 1 small small French baguette Day-old baguette is best for crispiness.
  • 1 cup fig jam (300 g) Choose a good-quality fig preserve.
  • 1 piece President brie cheese (200 g, 7 oz) Triple-cream brie for extra richness.
  • 8 halves pecan halves Adds crunch and nutty flavor.
  • a few sprigs fresh thyme Fresh is preferable to dried.
  • 2 tablespoons olive oil For drizzling over the bread.
  • ½ teaspoon black pepper For seasoning the bread.

Method
 

Preparation
  1. Preheat the oven to 200 degrees Celsius (390 Fahrenheit).
  2. Slice the baguette and arrange the slices on a baking tray, then drizzle olive oil over them.
  3. Season the slices with black pepper and bake for 5 minutes until golden and crunchy.
  4. Top each slice with a piece of brie, a tablespoon of fig jam, and a pecan half; return to the oven for a further 5 minutes.
  5. Remove from the oven and garnish with a small sprig of thyme.
  6. Serve warm.

Notes

Store leftover components separately. Toasted baguette slices can be kept in an airtight container for up to 2 days in the fridge. Assembled crostini hold poorly in the fridge.
