Ingredients
  

Salad Base
  • 1 bag leafy greens Mix of your favorite greens.
  • 1 cup cherry tomatoes, halved Opt for ripe, firm tomatoes for best taste.
  • 1 1 cucumber, sliced Freshly sliced for crunch.
  • 1 small red onion, thinly sliced Adds flavor and crunch.
Dressing
  • 1 tbsp apple cider vinegar Can substitute with balsamic vinegar.
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method
 

Preparation
  1. In a large bowl, combine the leafy greens, cherry tomatoes, cucumber, and red onion.
  2. In a small bowl, whisk together the apple cider vinegar, extra virgin olive oil, Dijon mustard, salt, and pepper until well blended.
  3. Drizzle the dressing over the salad just before serving to maintain the crispness of the greens.

Notes

Use chilled ingredients for the best refreshing taste. Only dress the salad right before serving to keep the vegetables crisp. Feel free to add nuts, seeds, or cheeses as variations.
