Ingredients
  

Fresh Fruits
  • 1 cup blueberries, halved Select firm, plump berries.
  • 1 cup green grapes, halved Use seedless green grapes for easier eating.
Topping
  • 1 package cream cheese (8 oz), room temperature Full-fat is best for a smooth texture.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1 tablespoon sugar Adjust to taste.
Base
  • 1 package flavored rice cakes (or one large cookie base) Choose minimally salted rice cakes.

Method
 

Preparation
  1. Prepare the fruit by washing and halving the blueberries and grapes.
  2. In a small bowl, beat the cream cheese with sugar and vanilla extract until smooth.
  3. Spread a generous layer of the sweetened cream cheese on each rice cake or cookie base.
  4. Decorate with halved blueberries and grapes to resemble land and water. Serve immediately for the best texture.

Notes

Chill cream cheese slightly before assembly to keep it firm. Use disposable piping bags for even cream cheese circles.
