  • 1 cup water To dilute the broth slightly.

Vegetables
  • 1 cup sliced mushrooms Add meaty depth to the soup.

  • 1/2 cup sliced carrots Make sure to slice thinly for even cooking.
Frozen Wontons and Garnish
  • 1 cup frozen wontons Choose pork, chicken, or vegetable filling.

Preparation
  1. Heat the broth and water over medium heat until small bubbles form.
  2. Add garlic, ginger, and soy sauce; let them infuse for a minute.
  3. Bring to a simmer, then add mushrooms, bok choy, and carrots; stir to cook evenly.
  4. Cook until vegetables are tender, about 4-6 minutes.
  5. Add frozen wontons and cook according to package instructions, typically 5-7 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with sliced green onions.

Notes

Use low-sodium broth, and be careful not to overcook the wontons. Can be customized to be vegetarian or include seafood. Great for meal prep and can be stored in the fridge or freezer.
