Ingredients
  

For the cookies
  • 225 g plain flour Provides structure and tenderness.
  • 150 g unsalted butter (cold, cubed) Creates flaky and crumbly texture.
  • 75 g icing sugar Gives a smooth sweetness.
  • as needed Smarties For the center of the cookies.

Method
 

Preparation
  1. Preheat the oven to 190°C (375°F) and line a baking tray with baking paper.
  2. In a bowl, whisk the plain flour and icing sugar to combine.
  3. Add the cold, cubed butter and rub it into the dry mix until it resembles coarse breadcrumbs.
  4. Bring the mixture together until a smooth dough forms and divide into balls (18–22g each).
  5. Shape each ball into flower petals using a butter knife or spoon, then press a Smartie into the center.
  6. Chill cookies in the fridge for 30 minutes.
Baking
  1. Bake chilled cookies for 8–10 minutes until the edges are pale golden.
  2. Transfer to a wire rack to cool completely.

Notes

Store in an airtight container in the fridge for up to 5 days. Freeze unbaked cookies for up to 3 months.
