Preparation
- Preheat the oven to 190°C (375°F) and line a baking tray with baking paper.
- In a bowl, whisk the plain flour and icing sugar to combine.
- Add the cold, cubed butter and rub it into the dry mix until it resembles coarse breadcrumbs.
- Bring the mixture together until a smooth dough forms and divide into balls (18–22g each).
- Shape each ball into flower petals using a butter knife or spoon, then press a Smartie into the center.
- Chill cookies in the fridge for 30 minutes.
Baking
- Bake chilled cookies for 8–10 minutes until the edges are pale golden.
- Transfer to a wire rack to cool completely.
Notes
Store in an airtight container in the fridge for up to 5 days. Freeze unbaked cookies for up to 3 months.
