Ingredients
  

Main Ingredients
  • 225 g plain flour Provides structure through gluten development.
  • 150 g unsalted butter, cold to cool room temperature, cubed Main flavor and creates flaky texture.
  • 75 g icing sugar Gives a smooth, melt-in-your-mouth sweetness.
  • as needed Smarties For decoration, adds color and chocolate flavor.

Method
 

Preparation
  1. Preheat the oven to 190°C (375°F) and line a baking tray with baking paper.
  2. In a bowl, whisk the plain flour and icing sugar. Add the cold, cubed butter and rub it into the dry mix until it resembles coarse breadcrumbs.
  3. Bring the mixture together using a spatula until a smooth dough forms. Divide it into small balls of about 18–22g each.
  4. Shape each dough ball into flower petals and press a Smartie into the center of each flower. Chill the shaped cookies for 30 minutes.
Baking
  1. Bake the chilled cookies for 8–10 minutes until the edges are pale golden. Transfer to a wire rack to cool completely.

Notes

Store baked cookies in an airtight container in the fridge for up to 5 days. Freeze unbaked shaped cookies for up to 3 months.
