Preparation
- Preheat the oven to 190°C (375°F) and line a baking tray with baking paper.
- In a bowl, whisk the plain flour and icing sugar. Add the cold, cubed butter and rub it into the dry mix until it resembles coarse breadcrumbs.
- Bring the mixture together using a spatula until a smooth dough forms. Divide it into small balls of about 18–22g each.
- Shape each dough ball into flower petals and press a Smartie into the center of each flower. Chill the shaped cookies for 30 minutes.
Baking
- Bake the chilled cookies for 8–10 minutes until the edges are pale golden. Transfer to a wire rack to cool completely.
Notes
Store baked cookies in an airtight container in the fridge for up to 5 days. Freeze unbaked shaped cookies for up to 3 months.
