  • 1 cup full-fat cottage cheese, drained well Use a well-known brand with visible curds.
  • 1/2 cup cornstarch Plain, fine-milled cornstarch is preferred.

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Drain the cottage cheese in a fine-mesh sieve for 15-30 minutes.
  3. Mix the drained cottage cheese with cornstarch until smooth and slightly thick.
  4. Shape the mixture into 1-inch balls and place them on the baking sheet.
Cooking
  1. Bake for 20-25 minutes until golden, rotating the pan halfway through.
  2. Let cool briefly and serve warm with a dipping sauce.

Notes

Store cooled tots in an airtight container for up to 3 days. Flash-freeze on a tray until solid for longer storage.
