Ingredients

For the ice cream base
  • 2 cups cottage cheese Use small-curd, full-fat for the best texture.
  • 1 cup heavy cream Choose cream with 36%+ milkfat for optimal richness.
  • 1/2 cup peanut butter Opt for creamy, natural peanut butter for best flavor.
  • 1/2 cup chocolate syrup Use your favorite chocolate syrup for swirls.
  • 1/2 cup caramel sauce High-quality store-bought is preferred.
  • 1/2 cup chopped peanuts Reserve some for topping when serving.
  • 1/2 cup sugar Adjust to taste for sweetness.
  • 1 teaspoon vanilla extract Enhances flavor profile.

Method

Preparation
  1. In a blender, combine the cottage cheese, heavy cream, peanut butter, sugar, and vanilla extract. Blend on medium-high until smooth.
  2. Transfer to a large bowl and gently fold in the chocolate syrup and caramel. Do not overmix to maintain distinct swirls.
  3. Fold in the chopped peanuts, reserving some for topping.
Churning
  1. Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions until it reaches soft-serve consistency (approximately 20–30 minutes).
Freezing
  1. Transfer to a freezer-safe container, pressing plastic wrap directly onto the surface, sealing with a lid, and freeze for at least 4 hours or overnight.
Serving
  1. Allow ice cream to soften at room temperature for 5–10 minutes before scooping. Serve with extra chocolate syrup, caramel, and reserved chopped peanuts.

Notes

For smoother texture, chill ingredients beforehand. If mixture appears grainy after blending, strain through a fine-mesh sieve. Adjust sweetness based on preference, taking swirls into account.
