Ingredients
  

For the marinade
  • 1/4 cup chipotle sauce Choose a sauce with real chipotle peppers and balanced vinegar.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Use fresh cloves for the brightest flavor.
  • 1 teaspoon smoked paprika Spanish smoked paprika is preferred for authenticity.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the wings
  • 2 pounds chicken wings Look for fresh, meaty wings with taut skin.
Optional
  • 1 serving Dipping sauce of your choice Pairs well with ranch, blue cheese, or mango chutney.

Preparation
  1. In a large bowl, whisk together the chipotle sauce, olive oil, minced garlic, smoked paprika, salt, and black pepper until smooth.
  2. Add the chicken wings to the bowl and toss thoroughly until each piece is well coated in the marinade.
  3. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results.
Cooking
  1. Preheat your oven to 400°F (200°C) or heat your grill to medium-high.
  2. Arrange the marinated wings in a single layer on a baking sheet or grill grates.
  3. Bake or grill the wings for 25–30 minutes, flipping halfway through, until crispy and golden-brown.
  4. Remove the wings and let them rest for 3–4 minutes before serving.

Notes

For extra-crisp skin, place wings on a wire rack over a sheet pan. If wings are soggy, finish briefly under a broiler or on a hot grill.
