Cooking the Filling

- Stir in the minced garlic and cook for an additional minute.
- Add the ground chicken and cook until browned.
- Mix in the diced tomatoes, Cajun seasoning, Worcestershire sauce, salt, and pepper.
- Simmer for 10-15 minutes until the sauce reduces slightly.
Making the Cheese Sauce
- In a separate saucepan, melt cheddar cheese with a splash of milk over low heat until smooth.
Assembly
- Toast the brioche buns until golden.
- Assemble the Sloppy Joes by placing the Cajun chicken mix on the toasted buns and drizzling with cheddar cheese sauce.
- Serve immediately with napkins as the sandwich is messy.
