Main Ingredients
  • 1 pound ground chicken Fresh is preferable to avoid excess fillers.
  • 1 onion chopped onion
  • 1 bell pepper chopped bell pepper
  • 2 cloves minced garlic
  • 1 can diced tomatoes (14.5 oz) Fire-roasted for extra flavor.
  • 2 tablespoons Cajun seasoning Look for blends with smoked paprika.
  • 1 tablespoon Worcestershire sauce
  • 1 cup cheddar cheese, shredded Shred from a block for smoother melting.
  • 4 pieces brioche buns
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

Cooking the Filling
  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground chicken and cook until browned.
  5. Mix in the diced tomatoes, Cajun seasoning, Worcestershire sauce, salt, and pepper.
  6. Simmer for 10-15 minutes until the sauce reduces slightly.
Making the Cheese Sauce
  1. In a separate saucepan, melt cheddar cheese with a splash of milk over low heat until smooth.
Assembly
  1. Toast the brioche buns until golden.
  2. Assemble the Sloppy Joes by placing the Cajun chicken mix on the toasted buns and drizzling with cheddar cheese sauce.
  3. Serve immediately with napkins as the sandwich is messy.

Notes

Can be made ahead and stored in the fridge for up to 4 days. Reheat gently before serving.
